Lemon Jello Cake
I'm sharing this recipe because it is one of my family's favorites and it was one of my late mother's best. She was a great cook and I have tried to keep her tradition.
This is a lovely dessert for spring and summer. A comparable taste would be Lemon Cooler cookies.
Here is the recipe:
Prepare 1 sm. box of lemon Jello with 1 c. boiling water. Let cool.
Mix 1 box lemon cake mix with 3/4 c. vegetable oil add 4 eggs one at a time.
Bake at 350 for 30 minutes. Cool 10 minutes.
Make icing. 2 c. powdered sugar and 1/3 c. lemon juice.
Poke holes all over the cake with toothpick. Pour icing over cake and spread.
